Position Summary The cook on duty performs clerical responsibilities related to patient care, including printing the diet list from the computer, editing patient menus, and preparing the patient snack list.
Under limited supervision provides communications between Food Service and other patient departments.
In the absence of the Food Service Manager, supervises all other Food Service personnel.
Prepares all hot food items including some salads and desserts, and is responsible for the final patient tray assembly.
Duties may vary to meet the requirement of the Food Service department activities.
Position Duties and Responsibilities The cook in charge is responsible for handling, preparing and serving food in accordance with the standard sanitary operating procedure and complies with the HACCP policy.
Meet meal schedules for patients, employees, and special functions as per policy.
Record all NPO, no diet orders, and clear diets on the daily log sheet.
Follow instructions on the log sheet.
All meals must be palatable and appetizing in appearance using garnish.
Also, the appearance of the tray is an important factor.
Following recipes is of utmost importance when working with different diets that require special attention regarding ingredients and portion control.
Assure that work surfaces are cleaned and sanitized, especially after handling raw products, including eggs.
The assigned monthly cleaning may be done at any time during the month or as necessary.
Performs all other duties listed on the cook’s job procedures including any additional tasks that may be requested by the Manager.
During the dining room service hours, the cook is responsible for operating the cash register and is accountable for the case receipts.
Review the checklist daily, posted on the bulletin board in the Food Service department and follow instructions.
The replenishment of all working supplies within the Food Service department is the responsibility of all Food Service employees.
Always remember FI FO (First in, First Out).
Maintains confidentiality as per hospital policy.
Maintains mandatory education requirements based on JCAHO, IDPH, and OSHA standards.
Courteously answers the telephone and follows through appropriately.
Maintain required training and/or education per hospital guidelines.
Follow and maintain all lawful safety, health requirements and regulations, and follow protocols for required protective equipment for peers, patients and community.
Promptly report safety issues such hazardous conditions, job-related injury or illness, and seek guidance or treatment.
Adheres to all professional standards, policies and procedures, federal/state/local requirements and regulatory organizations.
Maintains strict confidentiality of patient and records.
Portrays a professional and positive attitude for peers, patients and community.
Other duties as assigned POSITION QUALIFICATIONS Education Preferred Level: High School Diploma or GED.
Any equivalent combination of experience and education will be considered.
Food service sanitation certification is required.
Must be able to read, write and speak English.
Must have general knowledge of computer use for e-mail and testing.
Experience Knowledge of food preparation and operations of Food Service equipment is desirable.
A working knowledge of special and restricted diets will be helpful in assuring the proper operation of the Food Service Department.
The ability to communicate effectively with other personnel.
Work Environment The ideal candidate must be able to work and complete all physical requirements of the job with or without a reasonable accommodation.
Hazards are typical of institutional kitchens (hot cooking surfaces, sharp objects, electrical equipment, and extreme temperatures are frequently encountered).
On occasion, lift up to 50 pounds of miscellaneous food items.
Constant kneeling, stooping, bending, twisting and occasional need to lift patients Medium Lifting, generally lifting not more than 50 lbs.
maximum with assistance, with frequent lifting and/or carrying of objects weighing up to 25 lbs.
Requires a great deal of walking, standing, and bending to floor level approximately 80% of the time while on duty.
Must be able to reach shelves at least 6 feet high, reach work areas of 4 feet wide, and work on work surfaces 3 feet high.
Annual Requirements Participate in annual OSHA training.
Attend continuing education seminars as required.
Comply with employee health requirements.
Comply with hospital mandatory in-service training.
Complete annual HIPPA training.
Complete tray-passing training provided by nursing staff (AIDET).
